Mycotoxins are mold toxins. About 20 percent of the EU cereal crop contains measurable amounts of mycotoxins. Mycotoxins are largely heat stable and are generally not destroyed during food processing. Mycotoxins can be acutely or chronically toxic and can be carcinogenic but also cause hereditary damage.
