National reference laboratory for monitoring water content in poultry meat

Since 2005, AGES has operated the National Reference Laboratory for monitoring the water content in poultry meat in accordance with Regulation (EC) No. 543/2008.

The control is carried out according to the specifications of this method, which specifies maximum values for the water/protein ratio in frozen chicken, turkey and chicken and turkey parts.

If the corresponding limit value is exceeded, the farm concerned is notified by the competent authority. This is intended to prevent excessive addition of water in the course of deep-freezing.
